AALOO GOBHI (POTATO CAULIFLOWER VEGETABLE)

Aaloo Gobhi, a dry potato cauliflower vegetable is an absolute delicious dish. Always found on the menu of almost all restaurants, it is a favourite in many homes too.

Cauliflower is a member of the cancer fighting cruciferous family of vegetables. This antioxidant rich, anti inflammatory vegetable boosts digestion and detoxification too! Not to forget the nutrition it provides our body.

Gobhi or as some call it Phool Gobhi, can be used in preparing many other dishes like parathas, pulaav, biryaani, tikka. Aaloo Gobhi is a simple and subtle vegetable dish and goes very well with chapatis, naan, or just some daal rice. We used to order this dish from a particular restaurant. For quite a long time, after observing the dish closely I devised or say cracked this recipe of theirs. And it tastes exactly like restaurant one! I have just added some kitchen king masala to it, though the original recipe without it too, tastes yum. A favourite of mine and my son, here goes the recipe for AALOO GOBHI.

INGREDIENTS :

  • 500 GM Cauliflower
  • 2 Potatoes
  • 2 small Onions
  • 1 Tomato
  • 2 tbs Oil
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Asafoetida
  • 3 Garlic cloves
  • 2 Green chillies
  • 1 Bay leaf
  • 1/2 tsp Turmeric powder
  • 1 tsp Kitchen King masala (to be adjusted)…… optional
  • 1/4 cup Fresh Corriander leaves
  • Salt to taste

METHOD :

  1. To make aaloo gobhi, first soak the cauliflower or Gobhi in salted water for about half an hour. As a result, the worms, if at all present in the cauliflower will surface to the top and can then be easily discarded.
  2. Peel and chop the potatoes into large wedges. Wash the cauliflower thoroughly and cut it into medium sized florets. Chop the onions and tomato finely. Chop the green chillies and lightly crush the garlic cloves.
  3. In a heavy bottomed pan, heat the oil and add the cumin seeds. As soon as they crackle, add the asafoetida and the garlic cloves. Saute and then add the green chillies and the bay leaf .
  4. Now add the chopped onions and saute adding about two pinches of salt. Add the turmeric powder and mix. Cover and cook for a while.
  5. Add the potatoes and cauliflower and mix well. Add some more salt.
  6. Cover and cook, stirring occasionally. When the potatoes are half cooked, add the chopped tomato. Mix well and cook again till the vegetables are cooked
  7. Add the kitchen king masala and salt to taste. The masala is optional here. Mix well and cook covered for a few minutes.
  8. When done, garnish with chopped coriander and serve hot with Rotis or some Varan and steamed rice or with chapatis in tiffins. Do serve the healthy Gaajar Flower Taaja Loncha as an accompaniment by the side.

NOTE :

Aloo gobhi is a very easy and simple dish to prepare and a very healthy one too. It’s simple and delicious taste appeals to one and all. Do give it a try and you are sure to love it.

An artist by nature, I love painting, travelling to different places and photographing nature, gardening, crochet, reading, etc. It's my nature to give my best to anything and everything I do. From a person who could cook very few dishes..... I have converted myself to a person who now can cook varied dishes! I like perfection in all my work. Reading a lot of recipes, watching different famous chefs' cooking shows on television and observing their methods, techniques and tips very closely and studiously ....is what has made me a very good cook today. Though there are numerous recipes I haven't tried my hand at..... there are many other in which I have gained exerpertise only by trial and error! I still watch all interesting cookery shows on TV to gain more knowledge on cooking techniques of other cultures from here and abroad!! Nowadays, I have started adding healthy twists to my dishes as and when I can without compromising on their original taste. Started this blog to share a few recipes of mine with all other cooking enthusiasts! Happy cooking to all! 😃

    1. Thank you for the compliment!I too got introduced to this vegetable at a particular restaurant after my marriage. As I liked it’s subtle but still delicious and simple flavours, I decided to try making it myself at home. And eventually succeeded!
